You can collect this information however you like. You can build an Entity Relationship Model, use Excel or your desired mind mapping tool. Whatever helps you to get an overview of the content you have and the information you need.
- Layers (basically your content types) to create.
- Fields per Layer (including the Lists for the Tagbox fields)
- Lists and List Items (basically every tagbox)
- Fields per List (which may link to other Lists again)
